Raw Chocolate Chip Cookies!
Nothing is more comforting than a warm chocolate chip cookie. Enjoy these with a glass of almond milk and you will be in complete BLISS! I love how raw foods are so versatile and better than the foods we grew up with, because they are good for you! I created this recipe modeled after my mothers cooked recipe. They are delicious! You could eat this whole plate of cookies and know that it is giving your body so much good stuff! Live enzymes, vitamins, minerals and most of all LOVE!
Ingredients
2 1/2 Cups almond meal (grind raw almonds in coffee bean grinder)
1/2 tsp. pink Himalayan salt
1/2 cup raw honey
1/4 cup freshly squeezed orange juice
1/2 raw cacao nibs
Vitamix all ingredients except cacao nibs. Add them to the batter once it is all combined.
Roll dough into balls and place on Excalibur dehydrator trays with non-stick sheets. Flatten with fork. You may need to occasionally dip the fork in water, so it doesn't stick to the cookie. Dehydrate for 6- 8 hours.

Allydra loves your raw recipes you post on my facebook..Now she wants a dehydrator and i see over at your faves that they ar not even as much as i thougt they were! Hehehe...i was using the oven open all night on low to dehydrate. Or just leaving stuff by the fan in the summer;) Haha.it works though..anyways,,yummo, cookies! Must try these asap! Keep rockin!!!

ReplyDeleteYou can purchase a dehydrator directly through this blog! I highly recommend the Excalibur on the right of this page. It is amazing and you can do multiple batches of things with the 9-tray model! We love ours!

ReplyDeleteI could not find this blog again for the life of me today before I went shopping for my excalibur! haha.. I must learn to favourite sites!
So, we bought the 9 tray today (if you are reading this and are in the US then buy from this site on the right of the page>>) but, I am in Canada so we bought it at a local dealer.
Anyways, wanted to share the recipe we just adapted from your recipe here.
3 cups soaked cashews
1/2 cup raw honey
1/2 tsp realsalt
1/2 cup raw cacao nibs
I always soak our nuts because of what I have learned about phytic acid lately...So I hope the cookies still turn out alright..The 'batter' was more runny so I could scoop it onto the trays and not roll it into balls..
I'm going to put them in the dehydrator when Simons organic beef jerky comes out (LOL, my awesome unschooler got the first run on my new toy ;)
I am hoping they will be a chewy and still yummy version of yours here...Will keep you posted on how they turn out!(and probably post pics on facebook soon :)
alright..maybe next time i will soak my nuts and then dehydrate them BEFORE i make the cookies ;) They are done now and super chewy and awesome rawsome but it took forever to dehydrate them :) very yummy though and i thought u may like to hear that they worked out ;)
